Not too long ago Dirk Schöer moved from the river Rhein to the Elbe looking for new challenges. He intended to develop an individual style of cooking which he proves amongst other examples with his Potato/Leek- Puree (mash) in a butternut foam and caviar as a side dish seved to glazed ray fins.
